Ingredients
2 small bitter melons (ampalaya) sort of julienned, but not too thin ~ 1/8” (seeded and “meat” taken out)
3 cloves of garlic, chopped
½ onion, sliced
1 large tomato, chopped
Handful of sliced pork (can also substitute 1-2 bacon slices)
Salt
Soy sauce or fish sauce, to taste
Directions
1. Soak sliced bitter melon in salted water for ~ 5 min. Remove from water, pat dry, and put aside.
2. Cook sliced pork in water. Put aside
3. Sauté garlic and onion in pan. Add cooked pork.
4. Add sliced tomato and continue to sauté.
5. Add soy sauce and salt to taste.
6. Add some water (enough to sauce ingredients in pan) and bring to boil.
7. Add sliced melon and cook until slightly tender (maybe al dente)
Serve.
* Bitter Melon is excellent vegetable to balance blood glucose levels, helpful in patients who have: Metabolic Syndrome/Pre-Diabetes, Diabetes Mellitus (Type II) and PCOS (Polycystic Ovarian Syndrome).
